10–15 Minute Potato & Egg Skillet

This quick and delicious meal comes together in just 10–15 minutes!

Ingredients:

  • Potato, thinly sliced
  • 2 eggs
  • Tomatoes, diced
  • Red onion chopped
  • Fresh parsley, chopped
  • Turkey deli meat, chopped
  • Cheese (your favorite kind)
  • Salt
  • Black pepper
  • Italian seasoning

Directions:

  1. Pan-fry the potato slices over medium heat until golden brown on one side.
  2. Flip the potato slices over.
  3. Beat the two eggs and pour them evenly over the potatoes.
  4. Sprinkle the tomatoes, parsley, turkey deli meat, and cheese on top.
  5. After the raw side almost cooked, reduce the heat to low, cover the pan, and cook until the cheese has melted and the eggs are fully set.
  6. Season with salt, black pepper, and Italian seasoning.
  7. Serve immediately and enjoy!
