This quick and delicious meal comes together in just 10–15 minutes!
Ingredients:
- Potato, thinly sliced
- 2 eggs
- Tomatoes, diced
- Red onion chopped
- Fresh parsley, chopped
- Turkey deli meat, chopped
- Cheese (your favorite kind)
- Salt
- Black pepper
- Italian seasoning
Directions:
- Pan-fry the potato slices over medium heat until golden brown on one side.
- Flip the potato slices over.
- Beat the two eggs and pour them evenly over the potatoes.
- Sprinkle the tomatoes, parsley, turkey deli meat, and cheese on top.
- After the raw side almost cooked, reduce the heat to low, cover the pan, and cook until the cheese has melted and the eggs are fully set.
- Season with salt, black pepper, and Italian seasoning.
- Serve immediately and enjoy!
