Homemade mayonnaise and Thousand Island salad dressing

Creamy and delicious!

Boiled-Egg Mayonnaise

Ingredients

  • 2 hard-boiled eggs, peeled
  • 2–3 tbsp oil (vegetable, canola, or light olive oil)
  • 1 tbsp lemon juice or vinegar
  • ½ tsp salt
  • ½ tsp mustard (optional)
  • 1–2 tbsp water, as needed

Directions

  1. Add the boiled eggs, lemon juice, salt, mustard, and 2 tbsp oil to a blender.
  2. Blend until smooth.
  3. Add a little water, 1 tablespoon at a time, until you get the consistency you like.
  4. Taste and add more lemon juice, salt, or oil if needed.

💡 For a richer, more mayonnaise-like texture: use 3–4 tbsp oil and blend very thoroughly.

For your 2 to 3 eggs:

  1. Bring water to a boil on high.
  2. Once boiling, reduce to medium-low.
  3. Cook 11–12 minutes for fully hard-boiled eggs. (Normally 7 min.)
  4. Transfer immediately to ice-cold water for 5 minutes.

Since the eggs are already cooked, this is a nice alternative if you want to avoid raw eggs. Keep it refrigerated and use within 3–4 days.

You can easily turn your boiled-egg mayo into a Thousand Island-style dressing. 🥗

Thousand Island Dressing

For about 1 cup of mayo, mix:

  • 1 cup boiled-egg mayo
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish (or finely chopped pickles)
  • 1 tbsp finely chopped onion
  • 1 tsp lime juice or vinegar
  • ½ tsp sugar — optional
  • Pinch of salt
  • Pinch of black pepper

How to make it

  1. Put everything in a bowl.
  2. Stir until completely combined.
  3. Taste and adjust:
    • More ketchup → sweeter and more tomato flavor
    • More lime/vinegar → tangier
    • More relish → sweeter and pickle-forward
  4. Refrigerate for 30 minutes before serving so the flavors blend.

Tip: Since your mayo is made with boiled eggs, blending the finished dressing briefly will give you a particularly smooth, creamy consistency.

I boiled three eggs, saved one for my salad, and used the other two to make mayo and thousand island dressing.

I made mayo with two eggs and all the other ingredients. Then I left about half of the mayo in the blender and turned it into Thousand Island dressing by adding chopped onion, extra black pepper, a tiny bit of brown sugsr, and one ketchup packet I had saved from a fast-food restaurant. Blend a bit and serve!

It turned out so delicious! 🥗❤️ Homemade really does taste better!
