Omelette with avocado and veggies


  • Three eggs
  • onion
  • Tomatoes
  • Yellow squash
  • Zucchini
  • Shredded cheese
  • Avocado

Chop all the above veggies to smaller pieces.

Stir-fry all the veggies and when it is half way done, crack the eggs and put in the eggs and stir them in the pan until all done cooking. Add shredded cheese on top and sliced or diced avocado on the top.

Serve with some fruits and your favorite drink. Now you have a healthy breakfast or brunch.

Off the tangent here:

I am eating this meal with pomegranate. I saw some people making videos showing how to eat pomegranate. It may be hard to spell pomegranate, but for Pete’s sake, it does not have to be so complicated to eat it. I am also wondering why would people spend more money to buy a container of pomegranate seeds. First, it is more expensive; second, it won’t stay fresh that long. To eat pomegranate, simply cut it to smaller chunks, and chew on the the arils (the red parts of a pomegranate). You can eat the whole arils including the fiber-rich seeds or spit out the seeds if you don’t like it. I personally prefer to spit the seeds out, but they are perfectly edible. Enjoy this fruit with your main course; it’s rich in fiber, vitamins, minerals and bioactive plant compounds.
