Hearty Chicken Soup

This is a super easy soup to make!! Make a good chicken broth with two to three drumsticks and simmer them for at least one hr to two first. You can do this ahead of time.

When boiling the chicken drumsticks, dump the first pot of water after the water is boiled and chicken is cooked through. Then boil and simmer the second pot for preferably at least 2 hours. Or you can make your chicken broth with slow wok before you go to bed.

Then simply use this chicken broth to make a delicious chicken soup.

In this pot, I add the following ingredients after the chicken broth boils:

  • Onion (shredded, use a small portion)
  • Mushrooms (quartered)
  • One corn (cut into four sections)
  • One carrot (sliced)
  • Cilantro

Add the cilantro after all the veggies are cooked. Then sprinkle Lawry’s seasoning salt and black pepper. You can add a bit of sesame oil if you have it.

It is so delicious! And healthy too! Give it a try!

It took me only 15 to 20 min to make this dish if you already have the chicken broth made beforehand.


I only ate one bowl last night and have a lot of leftover soup. Today I added the following ingredients into my leftover soup after it is heated on the stove top:

  • 1 and 1/2 half tablespoon of seeweed. (Before cooking, I soaked it in the water in a small container for a brief couple of minutes, then dump the water)
  • Some potato gnocchi
  • One bag of seafood snaker (cut into pieces)
  • Some more fresh cilantro.

Italian potato Gnocchi only takes three minutes to cook along with veggies. Very tasty and satisfying!

Now I am ready to have a nice day! A cup of coffee sounds good to me.
