Egg pies with zuccini, onion, peppers,microgreen and cheese

This is very easy to make.

Vegetable Ingredients: for four egg pies

-Chopped onion (about 1/4 cup)

-two small red and yellow peppers (chopped to small pieces)

-zucchini (I used two smallest zucchini

-tomatoes (just 1/4 cups, chopped, if you have them)

-two stalks of green onion

Oil:

-butter or cooking oil to grease the pie maker

Egg Mixture:

—2 eggs

—some shredded cheese

—milk (just add maybe about 3 to 4 tablespoons

Mix these together with the following seasonings

Seasonings:

—Italian herbs

—Oregono

-—pepper

—a bit of tumeric powder (optional)

—red chili flakes (optional)

Procedure:

Heat your pie maker with Pam or butter. Just smear the butter on the hot pie molds.

Fill up the pie molds in the pie maker with vegetable mixtures. Grease the top moulds on the cover. Close the cover for about one minute.

Then pour the egg mixure in the pie molds over the slightly cooked vegetables in the molds. Oil the top molds on the cover and cover until it is cooked or until the steam stops coming out. Check with a toothpick. If it comes out dry after poking into it, that means it is cooked.

It is very easy and it shouldn’t take more than 15 minutes.

I add a bit of microgreens on top to add more nutrition and also for garnish. Eat this meal with some fruits!

Very tasty. very simple and very nutritious.

Tip 1: I got this brand new pie maker from a second hand store. We can find this type of cookware cheaply in a thrift store.

Tip 2:

I bought this case of milk from Costco which has 18 small cartons in the case. This does not require any refrigeration before opening. I don’t usually drink milk but this is handy to have when I need a bit of milk for my coffee or baked food that requires milk.
