Potato cheese wrap with eggs and veggies

Ingredients for one person

Two eggs for one person

Some Turkey or chicken deli meat if you have it

Two small potatoes

Grated cheese

Microgreen

Tomatoes

Cucumber

Avocado

Onion

Cut as seen below in one of the photo

Bake at 400 degrees sliced potatoes spread over the sheet (put one on the edge of the other so they will be connected together when cheese is melted on top of them. Flip it to the other side and when the cheese is melted and slightly brown and cover the potato sheet with another layer of the shredded cheese and bake it until it is baked through and broil it the last couple of minutes if you like it slightly brown.
Spread the above veggies over the baked cheesy potato “sheet.”
Prepare this ahead. Pan fry two eggs for one person and get it ready for the sandwich. Sprinkle black pepper on top. No need to add salt since cheese on the potato slices is quite salty already.

Place the eggs on top. And enjoy!!!
