Chickpeas, red beets, squash, cucumber green pepper salad

Add the following:

One can of chickpeas

1/2 green pepper, diced

1/2 big cucumber, diced

1/2 red pepper, diced

1/2 yellow squash, diced

Some broccoli

2 medium size beets (boiled and then simmered for 15 minutes and peeled and diced

1/3 cup quinoa (stir-fried with cooking oil and add water until water is absorbed and the quinoa is cooked)

Mix these ingredients together with olive oil, Italian seasonings, parsley, balsamic vinegar, salt and pepper, everything bagel seasoning, etc.

Right before serving, you can add some nuts and raisins!
