Stir-fried veggies with chicken/walnuts and brown rice

Heat up about 2 tablespoons of avocado oil or coconut oil. Stir-fry carrots, onion, celeries, green onion, chopped garlic and green onion.
At the end of stir frying, add spices—salt, pepper, chili pepper, garlic powder, Tumeric powder (optional). Don’t overcook to preserve the nutrients. I like the dish when the vegetables are slightly crunchy. Eat it with brown rice and a meat dish or some nuts if you are a vegetarian.

You can cook your own rice, but to make a quick meal, I just use the frozen brown rice I got from Trader Joe. It only takes about 2 min to heat up a small bowl of rice.

I ate this vegetable dish with a stewed Chicken dish I have cooked the other day. If you don’t have any meats or don’t feel like cooking any meat, you can also easily get a roasted chicken from the store. Cut up the roasted chicken and stir fry the chicken pieces with garlic, green onion. Stir-frying the chicken with garlic and a bit of oil will make the chicken taste better. You can eat it with stir-fried vegetables and make a very balanced meal for yourself!!

I have enough leftover for lunch next day!!! Yeah!!!
I cooked an egg to add it to the leftover veggies for tomorrow Lunch.
Shell about five walnuts and soak them overnight. It will still taste crunchy and tasty! You can find videos on line to learn how to crack them open easily.
Crack and shell about five walnuts. Soak the walnuts in drinkable water overnight. Tomorrow I will drain the water and add it to my lunch box. This will add more protein to my lunch. I will eat the leftover veggies, egg, and walnuts over brown rice tomorrow.
