How to cook a vegetable dish with less oil

From my sister:

Fast and easy meal !

First, parboil the vegetables (chicken peas, zucchini, carrots, broccoli)

Secondly, put a little bit of oil to stirfry the parboiled vegetables with minced garlics.
If you like, you can also add some diced yellow or green squash. Stir quickly and then add a little bit of cornstarch or tapioca water ((water that is mixed with the tapioca powder or corn starch). You can use chicken broth instead of water if you like. Then sprinkle with some salt and pepper.
