Chicken wonton non-glutinous noodle soup with vegetables and grilled chicken

Squeeze the juice out of 1/2 of the lemon into the noodle soup before serving.
Besides the ingredients above, also use the vegetable stock or chicken broth for the soup base. First boil the stock with the ginger slices and chopped garlic. For one person, add one rice noodle cluster and about 6 to 8 pieces of wonton, grilled chicken, and cut red onion into the boiled broth. Cook for about two minutes over medium high. Then the last 1 minute add the green vegetables—bok choy/spinach and the last 30 seconds cilantro/parsley.

Add some chili paste to the soup to add some spice into the soup bowl if you like it spicy. Also don’t forget to squeeze some fresh lime or lemon juice into the bowl before serving.

In place of rice noodles, you can also use noodles made of lentils if you want to avoid eating noodles that are made of wheats.

I love this meal. It is so easy to make and it is nutritious! It takes only about 15 min. to prepare and cook it!

I especially like to eat noodle soup when I need something to warm me up or when I am catching a cold. A bowl of chicken soup cooked with ginger and garlic is a good remedy for curing a cold! You don’t need to cook anything else. It will fill you up!
