How to make chicken stock and Hainan chicken Rice

Drumsticks alternative:

Four or five chicken drumsticks. I got organic three-bags pack in the Costco. I use one of them and keep the other two in the freezer for later usage.
Add enough water to submerge these chicken drumsticks in a pot. Boil the water and as soon as it is cooked through (no blood inside), toss the boiled water. Rinse the foam off the drumsticks. (Alternative method to cook a clear chicken broth: before boiling them, rub the chicken drumsticks or whole chicken with a lot of salt and exfoliate all the unclean surface and rinse them off very well. Then you can skip the above step, just directly make the chicken stock. Just after boiling and then simmer for about 20 min skim off a bit of foams. Then continue to cook for 25 min more. The broth would be just as good!)
I put these cooked and clean drumsticks to another clean bigger pot.
Prepare one onion, one cinnamon stick, slices of ginger, and four to five cloves of garlic , two to three stalks of green onions, 8 small whole black peppers into the pot (or add the ground black peppers later into the broth). I wish I have green onions.
Add the seasonings into the pot.
Add water into the pot and bring it to a boil and then turn to low heat 1–one notch higher than low. Simmer at least 45 min or 2 hrs. But if you want to eat the chicken like in the Hainan chicken, keep the stock but take the chicken drumsticks out after cooking for 45 min. Put the chicken in a container of water with some ice cubes and soak them about 10 to 15 min. Then you can use the chicken meat in Hainan chicken rice or in noodle soups or even salad.
Soak the chicken in a container of water with some ice cubes to stop the cooking process for 10 min for drumsticks, but 15 min for a whole chicken.

You can use the chicken broth to make delicious soup.

This is what the chicken stock looks like after simmering for 45 min. Take the chicken out and put them into a container of water with ice cubes and keep the broth only to make soup and hainan chicken rice.
With five drumsticks I made about 6 cups of chicken broth. Discard all the seasoning ingredients.

Hainan rice:

Use chicken broth to cook flavorful rice. First, heat up oil in a small pot, then add chopped garlic, ginger and green onion, stir-fry them until the aroma comes out, then add the rice and add chicken broth (one cup white rice, one cup broth. If you use brown rice, add extra broth.

Hainan chicken:

Eat this chicken and dip them with the following sauce:

Sauce:

First heat up a table spoon of oil. Add the hot oil to the following ingredients: chopped ginger, garlic, green onion and sesame oil, some chili pepper or paste (if you like ot hot)

Whole chicken Alternative to chicken drumsticks:

Instead of chicken drumsticks you can also use whole chicken to make the stock using the same method.

Serve this chicken and Hainan rice with uncooked cucumber slices and some cilantro and the above homemade sauce!
