Zucchini noodles with mango avocado dressing

Zucchini noodles with cherry tomato and walnut (I used walnuts that was soaked over night to get rid of anti nutrients). I only used one zucchini but you can add extra if you want to. I have used a vegetable spiralizer device to make zucchini noodles.
Add the mango and avocado dressing.
Mix them up.

Besides one avocado and one mango, I also added one green chili, some fresh parsley, two green onions, Italian dry herbs seasonings, a little bit of salt and pepper. Also squeeze one big lemon or you can use two small limes instead. To make the blender mix easily these ingredients, I added a bit of oat milk but you can add coconut water or other liquid instead.

The dressing can be used for vegetable dips . It also tastes so good to add on top of the cauliflower pizza crust with cheese right before serving. Yummy!!!

Here is a great idea to use this mango avocado dressing or zucchini noodles with a premade pizza crust. Put either of this mixtures on top of melted cheese cauliflower pizza with grilled chicken. It tastes even better with some crunchy tasty cauliflower pizza!!
I just added my leftover zucchini noodles over cauliflower pizza after I baked it with grilled chicken and cheese. I have a big round piece of the pizza crust but I just broke it into four little pieces so I could just use a portion of it and it could fit into a small oven or a smaller pizza heating device.
